- 1 inch cinnamon

- 1 cup yoghurt
- 2 teaspoon Biryani masala or tandoori masala
- 1/2 teaspoon haldi
- 1 teaspoon kashmiri Red chilli powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- as per taste Little salt
- 2 teaspoon ghee
- 2 tablespoon Few strands of kesari dipped in of milk
- 1 cup fried onions
- 1 cup mint leaves finely chopped
- 1 cup coriander leaves finely chopped
- 1/2 teaspoon rosewater
- 2-3 drops kerwa water
Steps to make to make Veg Dum Biryani
- Wash and Soak rice for 30 mins. Keep a vessel for boiling rice. Once it boils add whole garam masala and rice into it. Cook rice 80 %. Drain the rice.

- Now take deep bowl and add all the vegetables. Now add all the ingredients for marination.

- Fry onions till golden brown.

- Now add 2 tablespoon of oil and put the vegetables and cook it 50%. Rest 50 % will be cooked when we cook Biryani.

- Now take wide and heavy bottomed vessel. Add one tablespoon of oil. Put a layer of. one fourth of vegetables. Spread little rice over it. Spread fried onions, mint leaves and coriander leaves. You can repeat for 2 to 3 layers of rice and vegetables.


- For last layers..add saffron milk, little rose water and kewra water and 2 tablespoon of ghee and keeping on low flame for about 25 to 30 mins.

- Now after 30 mins switch off the flame and leave for 15 mins. Serve with Raita and papad.. relish veg Biryani
