  3. 1 whole garlic pod
  4. 1 piece ginger
  5. 1 onion
  6. 1 bay leaf
  7. 1 star anise
  8. Pinch mace (javitri)
  9. 2 green chillies
  10. 3 tbsp fennel (saunf)
  11. 3 tbsp coriander(sabit dhania)
  12. 6 glass water
  13. Masala
  14. 1/2 cup oil
  15. 1/2 cup yogurt
  16. 1 onion small
  17. 1 tbsp salt (to taste)
  18. 1/2 tsp turmeric
  19. 1 tsp ginger garlic paste
  20. 8-10 whole red chillies
  21. 1 bay leaf
  22. 1-2 stick cinnamon
  23. 4 cloves
  24. 1 star anise (badiyan)
  25. 2 black cardamom
  26. 4-6 green cardamom
  27. Pinch nutmeg & mace powder
  28. 4-6 green chillies
  29. 3-4 potato (optional)
  30. 1 tomato (optional)
  31. 750 gm basmati rice

Steps to make to make Yakhni Pulao /White Pulao

  1. Fennel seeds(saunf),coriander/ sabit dhania are taken in a piece of cloth/bag (malmal ki potli).and tied with thread.add this bag in pot along with beef,sliced onion, bay leaf,garlic cloves,ginger piece,green chillies 1.5 litre water and leave to boil at medium flame.
  2. Let the beef get tender and 2-3 cup stock/yakhni is left.either strain the stock to remove onion, garlic.I dont remove them and mash them with spoon as they add to flavour.take the cloth bag out,squeeze it to get juices from stock.
  3. Add oil in another pot.add 1 small onion sliced,fry to golden,add whole red chillies,potato,bay leaf, yogurt,cinnamon,cardamom,cloves,1 tsp ginger garlic paste & fry all together.add 1 cup water for potatoes to get soft.when they are tender,add meat from stock, salt,turmeric and fry well.I add one tomato as well.it is totally optional.
  4. Wash and soak rice according to rice type.drain the water and add rice in beef masala.add the stock in rice and if needed add more water as well.quantity of stock should be that rice get immersed in it.taste salt now and adjust if required.let the rice cooked in stock at medium flame.
  5. When the water is all getting dried up,check the rice are tender then add chop green chillies at top.keep the pot at dam over hotplate.6-8 min high heat, then lowers the flame to low till serving.
  6. Mix the rice and beef before serving.serve with raita,red chutni,kachoomar,top up with fried onions.enjoy with cookpad.
