  1. 2 cup basmati rice
  2. 1 cup golden fried onion
  3. 1 tsp shahi jeera
  4. 1 inch cinnamon
  5. 2 green cardamom
  6. 1 Black cardamom
  7. 4 cloves
  8. 4 black pepper
  9. 1 star anise
  10. 1 mace
  11. 1/2 nutmeg
  12. 1 tsp chabilla
  13. 1/2 tsp Marathi muggu
  14. 4 green chillies
  15. 1 tbsp ginger garlic paste
  16. 1/2 cup curd
  17. 1/2 cup coriander leaves
  18. 1/2 cup cup mint leaves
  19. 1/2 tsp saffron threads
  20. 1 tbsp milk
  21. 1 tomato
  22. 1/2 cup sliced carrots
  23. 1 cup cubed cauliflower
  24. 1/2 cup cubed paneer
  25. 1/2 cup green peas
  26. 1/2 cup chopped beans
  27. 1/4 cup grated beat
  28. 1 tsp garam masala
  29. 1 tsp lemon juice
  30. to taste Salt as per Taste
  31. 1 tsp Red chilli powder
  32. 1 tsp turmeric powder
  33. 1 tsp coriander powder
  34. 2 tbsp clarified butter

Instructions to make to make Vegetable Biryani

  1. Mix all vegetables in curd with 1/2 tsp salt and red chilli powder.
  2. Keep it aside for one hour.
  3. Now cook rice with whole spices and 1 tsp clarified butter and salt till 75% done.
  4. Now cook vegetables with turmeric powder, coriander powder,ginger garlic paste,slited green chillies, chopped tomatoes and salt till it dries.fry it in 1 tbsp clarified butter.
  5. Now heat a heavy bottom pan.
  6. Pour rest of clarified butter.
  7. Now spread one layer of half vegetables.
  8. Now spread some fried onions and some garam masala on it.
  9. Now sprinkle some coriander and mint leaves on it.
  10. Now spread half semi cooed rice on it.
  11. Repeat same process with rest of vegetables.
  12. Repeat same process with rest of rice.
  13. Cover it air tight.
  14. Or put one plate in it and keep one jar full of water over that plate.
  15. Take 1 tbsp lukewarm milk and pour saffron threads on it.
  16. Let it cook in slow flame for 15-20 minutes.
  17. If your heavy bottom pan is thin keep one tawa in bottom of that pan.
  18. Now switch off gas and open the cover.
  19. Now garnish it with rest of fried onion, coriander leaves,mint leaves, saffron milk,rest of clarified butter,garam masala and lemon juice.
