- 3 cups Long Grain Basmati Rice
- 1 Lemon
- 2 Green Cardamom
- 2 Cloves
- 2 Bay leaves

- 500 g Mutton
- 1 Tomato
- 1/2 cup Curd

- 2 tbsp Oil
- 1 tsp Salt

- 1 tbsp Biryani masala
- For Biryani
- 2 tbsp Milk
- 1/2 cup Fried Onion
- 2 tbsp Ghee
- 2 tbsp finely chopped Coriander leaves
- 6-8 Saffron strands
- 1 tsp Kewda essence
- 1 tsp Rose essence
- 1 pinch Yellow food colour
- 2 Tomatoes, sliced
- 2 Green Chillies
Steps to make to make Hydrabadi Mutton Biryani
- Heat oil in a wok and fry the thinly sliced onion.

- Marinate mutton pieces with fried onion, ginger garlic paste, turmeric powder, chili powder, garam masala powder, curd, and 1/2 tsp salt.



- Heat the remaining oil from the fried onion in a pressure cooker and put whole garam masalas.

- Add chopped tomato and cook for a minute.


- Add marinated meat, biryani masala, and salt.



- Mix well, close the lid and cook for 1-2 whistles.


- For rice, boil water in a big pan and add oil, whole masalas, and lemon juice.

- Add washed rice and cook till the rice is 70% done.

- Drain the water from the rice and keep it aside for cooling.

- Heat ghee in a thick-bottomed pan and put some gravy from the meat.

- Put half of the cooked rice in the pan.

- Sprinkle some fried onion, and coriander leaves, and then pour cooked mutton on it.


- Put the remaining cooked rice on it to make a layer and sprinkle fried onions, coriander leaves, green chilies, and sliced tomatoes.


- Now Pour saffron milk, yellow colour, kewda, and rose essence, cover properly and cook on low heat for 10 minutes.

- After that mix well and serve hot mutton biryani with raita and salad.
